 600 g Flour (00 if you can)

Place flour in a large bowl.

Make a well in the flour and crack the eggs into the well.

Beat the eggs with a fork until well combined.

With your fingers or a spoon, bring the flour into the eggs a little at a time until everything is well combined.

Knead the dough until completely combined. Turn out onto a lightly floured surface.

Knead the dough to develop the gluten, this may take some time, but once the dough is smooth and silky you have kneaded enough.

Wrap the dough in cling wrap and rest for at least 30 minutes.

Set your pasta machine to its widest setting.

Take a grapefruit sized ball of dough and press it flat on a lightly floured surface.

Run the dough through the biggest setting twice, dusting it with flour each time and folding it in half

Repeat this until the dough is silky smooth.

Once your dough is silky smooth, take it through each setting on your pasta machine until it is at the desired thickness.

Cut your dough into the shape you need for your dish as soon as it is the correct thickness. Don't let it dry out.
