Beat water and eggs until well combined.
Sift flour and salt and add to eggs with the lemon zest.
Beat until smooth.
Allow to rest for at least an hour. 60 Minutes
Lightly oil a frying pan and heat on a medium heat.
Pour batter into the pan and fry until lightly browned on both sides.
Sprinkle with cinnamon sugar, drizzle with honey and a squeeze of lemon. Roll up and serve immediately.
