INTRODUCTION

In winter I like to invite friends over for a good pot of soup and bread. I usually make fresh bread for them to enjoy, the smell of fresh bread baking when they arrive, really gets them in a comfortable vibe.

This bread wheel is easy to make, looks amazing and there is no need to find a pretty way to serve it, as the shape makes it look really special. Your guests can just tear off a piece of bread as they eat their meal. It’s not only good for soup, it’s great with a braai too.

You can top the bread with anything that you want to. I’ve used cheese and sesame seeds, but poppy seads, pumpkin seeds and sunflower seeds are also lovley.

This recipe makes two wheels, each with  21 small rolls. So just halve the recipe to make a single wheel.

 

INGREDIENTS

 4 cups Flour
 75 ml Salt
 20 g Fresh Yeast (1 Sachet of Instant Yeast)
 375 ml Milk
 1 Egg
 60 g Soft Butter

METHOD

In a large bowl, combine the flour and salt.

Rub the butter into the flour until you get the consistency of breadcrumbs.

Mix the milk, egg and yeast.

Pour the milk mixture into the dry ingredients and mix well, bringing it into a dough.

Turn the dough out onto a floured surface, and knead for about 5 minutes.

Place into a clean glass bowl and cover with clingfilm.

Allow to rise for 1 hour. Start 60min timer

Knock back the dough and knead for a minute.

Divide the dough into 21 pieces.

Make 21 balls of dough with the pieces.

Arrange the dough on a pizza tray or round cake tin. Start with one ball in the middle, surrounded by 7 balls and then finally finishes off with a third row.

Cover with a cloth and allow to prove for 1 hour. Start 60min timer

Preheat oven to 200ºC

Prepare an egg wash, by beating together and egg and a dash of milk. Brush this over the rolls. Top with your preferred topping.

Bake for 15 to 20 minutes until golden and baked through. Start 15min timer

Serve warm.
