INTRODUCTION

Easter baking is always so much fun for my kids, they love getting their hands sticky. I think they eat most of the speckled eggs before we get a chance to decorate with them, but that’s just part of the fun. Give these easy treats a try and let me know how they turn out.

INGREDIENTS

 200 g Desiccated Coconut
 1 Egg White
 30 ml Condensed Milk
 1 Pack Speckled Eggs to Decorate
 100 g White Chocolate Melted

METHOD

In a medium bowl, combine the coconut, egg white and condensed milk.

Mix well.

Press small amounts of the mixture into mini muffin tins, making a dent in the centre to create a nest shape.

Bake for 8 to 10 minutes, until the edges are lightly toasted. Start 8min timer

Allow to cool in the tin.

Remove the nests from tin and place half a teaspoon of melted chocolate in each nest. Top with speckled eggs.
