INTRODUCTION

If you know me, you know that I love fidley baking projects, the more fidely the better.

Can you hear the ‘but’ coming…

But, over Christmas with all the Christmas rush and a gazillion things to do, one family member will pipe up, “We haven’t had mince pies yet, this year.” (groan)

This is my solution, quick, easy and perfect to get the kids involved.

INGREDIENTS

 1 Roll of Puff Pastry
 1 Jar of Store-bought Minced Fruit Meat
 1 Apple, grated
 1 Zest of 1 Orange
 1 Egg Wash (egg with a little milk)
 1 pinch Icing Sugar to dust

METHOD

Preheat oven to 220ºC and grease a baking tray (sprinkle with castor sugar if you wish)

Mix the apple and zest into the fruit mince.

Unroll the puff pastry and cut into two equal pieces.

Press a fork into the one half of pastry and place on a prepared baking sheet.

Divide the second half of the pastry into 15 squares, make them bigger if you wish.

cut out the centre of each square with a star cutter. Reserve the stars.

On the pastry that is on the baking tray, place a small teaspoon of mince meat evenly spaced to match the squares you have prepared on the other half.

Brush the pastry around each mound of mince meat with egg wash.

Cover each mound of mince meat with the remaining pastry.

Brush with egg wash and use reserved stars if you wish.

Bake for 15 to 20 minutes until golden brown. Start 15min timer

Dust with icing sugar and serve.
