Muffins
 4 bananas
 250 ml dark brown sugar
 2 eggs
 125 ml oil
 3 ml vanilla extract
 250 ml flour
 125 ml oats
 125 ml desiccated coconut
 5 ml ground cinnamon
 5 ml baking powder
 5 ml bicarb
Streusel
 125 ml flour
 125 ml castor sugar
 30 ml butter
Streusel

Place all ingredients together in a food processor and pulse until crumbs are formed.
Set aside to put on top of muffins before they bake.

Preheat oven to 180C
Grease a 12 hole muffin tray or use muffin liners.

In a medium bowl, mash bananas and sugar together until smooth

Add oil, eggs and vanilla extract and mix until foamy.

Sift dry ingredients together and add to wet ingredients.
Mix well.

Divide between tins on a 12 muffin tray. Top with streusel.

Bake for 30 to 35 minutes or until baked through.

Remove from tins, cool slightly and then serve.
