Cream butter and sugar together until light and fluffy.
Beat in the egg and mix well
Add the dry ingredients, peanut butter and vanilla and combine well. The dough will be quiet sticky.
Chill dough in the fridge for at least 30 Minutes.
Preheat oven to 180ºC
Grease two or three baking trays
Roll chilled dough into golf ball sized balls and place them on the prepared baking trays.
Press a dessert spoon onto the top of each ball to press the dough flat.
Press a peanut into each cookie.
Bake for 12 to 15 Minutes until lightly browned around the edge of each biscuit.
Cool on a wire rack and store in an airtight container.
